Cherished recipes, handed down through generations

Johannes Dam & Søn is one of Denmark's oldest family-run bakeries, established in 1855 in the town of Aakirkeby on the island of Bornholm.

Today, the company is led by Master Baker Jacob Dam, who represents the sixth generation of the family dynasty and the fourth generation to produce their world-famous biscuits.

The bakery is defined by its commitment to high-quality, natural ingredients, ensuring that all products are made without artificial additives, preservatives, or dyes.

The History of the Bornholmer Biscuit

The iconic Bornholmer Biscuit was first introduced in 1924.

The story began when a German journeyman arrived at the bakery carrying a unique recipe for a rye biscuit. Master Baker Dam, looking for a way to optimize the bakery's resources, discovered that he could bake these biscuits by utilizing the residual heat ("after-heat") remaining in the large stone ovens after the day’s rye bread production was complete.

This slow baking process, combined with a sophisticated layering technique where the dough is folded into 24 to 27 paper-thin layers, creates the extreme crispness and delicate texture for which the biscuits are known. Because of this artisanal approach, no two biscuits are exactly alike.

Classic Rye - The Blue

24 paper-thin layers, baked with the island’s finest ingredients. The classic rye crispbread with sugar and caraway. Crispy and delicate like no other and perfect for, among other things, cheese boards and tapas.

a secret blend of spices.

Sesam-Chia - The Yellow

24 paper-thin layers, baked with the island’s finest ingredients. The organic Bornholm biscuit with black sesame and chia. Unlike the others, margarine is used in the mixture, so the biscuit can be enjoyed by vegans.

The light biscuit baked with wheat and graham flour. Not baked in 24 layers like the rye crackers. With a full-bodied taste of grain, a balanced sweetness, and a hint of vanilla.
